Cheeseology, a retail cheese shop and experiential cooking concept in Ybor City, has announced the launch of its national franchise program, aiming to bring its signature cheese-making experience to markets across the country.
Founded by Kelly and Paul Hays, a Tampa couple, Cheeseology blends artisan cheese education with hands-on workshops and curated retail offerings. The idea was born from a shared love of culinary creativity and a desire to create memorable, interactive experiences.

With a mission to bring people together through the art of cheese-making, the company is seeking franchise partners who are enthusiastic about food, hospitality and creating spaces where people can gather, laugh and learn something new.
“We believe everyone should have the opportunity to taste the magic of handmade cheese,” the company shared in a statement. “Our goal is to create unforgettable experiences where people can bond, laugh and create something delicious and memorable.”
The announcement marks a major step in Cheeseology’s vision to become the go-to destination for cheese lovers and aspiring makers alike. The company envisions its franchises as lively, inclusive gathering spots that are part classroom, part celebration and part neighborhood shop.
The original Ybor City location opened in early 2024.
