Rococo does a modern take on steak

Hidden down a side street near Tropicana Field is one of Tampa Bay’s hidden gems. Rococo Steak, a brand under Caldeon Concepts, contains all the elements one would expect from a fine dining establishment – an impressive wine selection, more than 650 labels, high-quality ingredients and an elegant atmosphere. The attention to detail in their cocktails and cuisine selections is apparent.

Rococo has been recognized by Wine Spectator as a “Best of Award of Excellence” winner for five years.

Dave Madera, director of operations for Caldeon Concepts, having traveled the world to places like Spain and Italy perfecting his drink skills, maintains that his first love will always be wine.

“Wine is my heart,” he says, but he still has a lot of fun with cocktails.

The signature cocktails, like St. Pete Fog and Gin for Two, present an experience rather than just a drink. When served, all of the senses are stimulated, not to mention they are incredibly tasty.

The food does not take a backseat. Under the leadership of Chef Jordan Buendia, each dish encompasses unique combinations of flavors and ingredients to bring a twist to dishes tried and true.

A wedge salad is served sliced horizontally instead of the typical wedge design, making it easier to eat. Add on the bacon jam, and it could be the best wedge salad you’ve ever tried.

The yellowtail snapper is served with orange saffron butter, making the fish literally melt in your mouth.

The star of the show is their steak offerings. The dry aged cowboy ribeye is cooked to perfection. It’s aged for 45 days and is so tender it cuts like butter, and the flavors will make your eyes roll back in your head. It’s just so good.

Rococo Steak is a fine dining enthusiasts treasure, and for Tampa and Sarasota friends, it’s worth the drive. ♦
