Barterhouse: A culinary revival in Ybor City (PHOTOS)

In the heart of Tampa’s historic Ybor City, a sophisticated culinary renaissance is unfolding, led by Barterhouse, a modern American restaurant. Under the guidance of hospitality veteran Kenneth Emery, and in collaboration with partners Chris Jimenez, Scott Black, Tony Marino and Kevin Lilly—founder of neighboring Rock Brothers Brewing—the team is working to transform Ybor City into Tampa’s next premier dining destination.

Emery’s journey to Barterhouse began in Detroit and led him to Charleston, where the city’s food scene inspired him to open the high-end steakhouse Burwell’s Stone Fire Grill and the rooftop raw bar Balao. These ventures allowed him to experiment with sustainability and build relationships with food producers. After hosting a series of pop-up dinners in Tampa Bay and Charleston, Emery and his team connected with local farmers, food and beverage leaders and culinary enthusiasts. Barterhouse is dedicated to honoring ingredients, the community and the rich history of its location, in Ybor. 

Barterhouse’s interior design is a collaboration between Emery, local designer Thomas Lamb and artist Ron Francis. The space integrates preserved warehouse windows and trusses, reflecting Ybor City’s storied past. A grand bar, reminiscent of a 1940s speakeasy, adds a touch of glamour, while artistic flourishes evoke the spirit of Ybor from the 1920s to the 1950s. The atmosphere balances refinement and relaxation, offering a warm departure from the typical Ybor vibe.

At the center of Barterhouse is an open chef’s kitchen, casting a warm glow throughout the space. The kitchen’s design, with raw and artistic elements, adds depth and authenticity to the overall aesthetic. Every design choice honors Ybor City’s rich history, while introducing a new level of ambiance.

In the kitchen, the husband-and-wife team of Chef Esteban Chacon and Pastry Chef Alejandra Chacon bring a unique flair. Blending their Costa Rican heritage with experience from Michelin-starred restaurants in Chicago, their expertise results in innovative, creative dishes. The menu at Barterhouse showcases their culinary vision, featuring unique creations.

The expertly crafted cocktail menu celebrates classic and inventive flavors. Standout beverages include the Anchors Away, a blend of Brugal 1888, guava, lemon and ginger beer, and the Bramble, a mix of gin, blackberry and lemon.

Barterhouse’s Tapitas menu offers a journey through flavors. One standout dish, the Ybor Pastelito, pairs a delicate water stroopwafel with guava, cream cheese and Serrano ham. Another, featuring locally sourced Burrata cheese, heirloom tomatoes, duck prosciutto and warm naan bread, creates a symphony of flavors.

The Disco Party Dip reinvents a classic with chorizo, Parmigiano-Reggiano and Cheez Whiz served with soufflés. Meanwhile, Hush Puppies feature duck picadillo and house-made XO sauce, encased in a golden-fried yuca exterior.

Barterhouse represents more than a dining establishment—it’s a community-driven labor of love, intertwined with the soul of Ybor City. The name “Barterhouse” reflects the idea of exchange and the commitment to locally sourced ingredients. Barterhouse is a testament to the dedication and collaborative spirit of Emery, his partners, the Chacon’s, and the entire team. Together, they’ve transformed a piece of Ybor City’s history into a culinary haven that captures the essence of the neighborhood’s past, present and future.
