Exclusive: Palazzo Pizza readies for grand opening in Tampa’s Hyde Park

Palazzo Pizza, a new concept, is preparing to open its doors on January 28 at 1818 W. Platt St., Tampa.

The concept was developed by Volpe Hospitality Group after being inspired by the travels, and network, of Jason Fox over the last 20 years. Fox’s hospitality career started in Tampa under the guidance of nightlife entrepreneur Carlo Colucci, who still owns and operates Club Prana in Ybor City.

“During COVID-19 we had a lot of time to study and prepare for the opening,” says Fox.

Palazzo Pizza will be a full-service dine-in restaurant and have an outside patio for dining as well.

He adds that takeout and delivery, both staples in their business, have increased throughout the pandemic. Palazzo Pizza will offer takeout through its online site and delivery through Grubhub, Uber Eats, and DoorDash.

Palazzo Pizza’s creations get their inspiration from Boston and Italy, Fox says.

The restaurant uses fresh ingredients in all of its recipes, including homemade sauce and locally-sourced meats.

Fox says the location in Hyde Park is perfect for takeout and “late-night slices.”

Volpe Hospitality Group includes Fox, Boston restauranteur Nick Varano and his son, Nico Varano, who serves as the chief marketing officer at Volpe; former WCW wrestling star Joe Gomez, who is heading up the real estate portfolio of Volpe; Elia Kallas, president of operations; and Tom Lennon of Watermark Capital.

The group plans to expand to multiple locations over the next 24 months.

The grand opening and ribbon cutting is scheduled for January 28 at 1 p.m.
